Koppert Cress launches Cuzco Leaves

Koppert Cress presents Cuzco Leaves, a cucumber-flavored leaf. According to the company, when used raw, it is a visually appealing ingredient. The stem can have too strong a taste, so only (parts of) the leaves can be used.

The leaf can be used in cocktails, with fatty fish, tuna tartare, steak tartare and dishes with vegetables. It is also good combined with avocado, citrus, fermented vegetables, smoked and dried dishes. In combination with fatty ingredients, the taste will be more nutty.

South America


Cuzco Leaves is the leaf of a plant that is related to the cucumber and comes from South America. In Peru the plant is grown for its fruits. The young shoots, leaves and tendrils are used as leafy vegetables.
