"Celery is a product that does not fluctuate a lot during the year. Production is in line with consumption and it is possible to grow plants," reports Katia Bagagli from Olivieri, a company specializing in the processing and commercialization of celery.

"The situation has now gone back to normal, but we have had a few issues with the Emilia-Romagna production during the summer. The high temperatures blocked growth and there were a few health problems."
The produce currently comes from Puglia and from Foggia in particular. "A few specialized producers are growing high-quality celery. Supply is in line with demand and prices are good."
Olivieri produces a particular variety of celery, with a white color and no strings, so it is very demanded by restaurants and medium/high-end stores. It is not very popular on the domestic market, while it is very much in demand abroad. .

"The variety is not recent and is characterized by a white color when ripe with no strings, meaning it is very much appreciated by restaurants and for fresh consumption in general. We sell a lot of it abroad, for example in France where they are very demanding when it comes to organoleptic qualities."
