Tyrolean vegetable processors are seeing a rapid increase in demand for ready-made goods

2000 kilos of peeled onions a week - served to the catering trade

The 56 employees at the Tyrolean fruit and vegetable processor Giner have their hands full. The men and women wash and cut 3000 kilograms of vegetables a week, wash and pack 8000 kilograms of lettuce and peel 2000 kilograms of onion, reports the Tiroler Tageszeitung. According to Andreas Giner, the turnover of his company increased from 6 to 7.5 million euros in a year.

"90 percent of our revenues are from with the preparation kitchen, 10 percent are from packed goods. This has very much to do with a lack of staff in many kitchens, but is also caused by a generational change among cooks," says the owner.

From catering to supermarkets
1800 different articles are produced by the fruit and vegetable processor. Peeled and cut by hand. 10,000 kilograms of peeled potatoes and potato salad per week are delivered to the Tyrolean gastronomy, to major customers such as the clinic as well as to canteens and supermarkets, cutting 13 tons of fruit for the Tyrolean market. "Even five-star hotels serve our potato salad."
