Acquired in 2018 by the store of the Fleury-la-Vallée farm (Yonne), the asparagus peeling machine comes from Germany, the leading European producer since 2003, with a yearly average of 130,000 tons. The asparagus is peeled using eight blades, before falling into a container full of water.
“Last year, clients were in an observation phase,” explains Ophélie. “But this year, the machine is often in use. Since the beginning of the season, it has peeled a lot of asparagus!”
