Spain: "We are barely affected by price fluctuations"

For some small producers, the greatest challenge is to deliver quality while respecting the environment. For them, profits are stable, as they are not subject to market fluctuations. Small horticultural volumes translate into price stability. "Not only do we make a profit, but we obtain excellent quality and reputable products. Only our surpluses go to wholesalers," explains Joan Ribosa.

Verduras Ribosa, with a 6 hectare farm in a privileged environment in Cabrera de Mar, Barcelona, has a wide range of products, including lettuce, potatoes, peas, cauliflower, parsley, artichokes, escarole, PDO-protected beans or tomatoes (plum and on the vine), as well as the local flagship crop: calçots. This tender, elongated onion, which is a little bulbous and has a unique flavor, is a traditional regional specialty on the rise, even outside its borders. The season starts in mid-October and ends in mid-April.

Although he doesn't have a Michelin star, Joan Ribosa works with a new concept from great restaurants: a gastronomy-oriented orchard. "We started using our farm products in the family restaurant, and now other restaurants want us to produce them for their kitchens. Some products are organic, even though they lack the certification," says Joan. The other sales channels are local markets, where prices are higher than those paid by wholesalers and where there is a loyal clientele.

Verduras Ribosa is a member of Vegetal Defense associations, which provide valuable knowledge and inspect the crops. Thus, they achieve a balance between flora and fauna, with a monitoring of parasites and the use of adapted treatments to prevent the spread of pests or fungi.

The wide range of horticultural products and the small acreage make it possible for the crops to be kept under control with accurate irrigation, no diseases and minimal losses. "The only issue is that this year's calçots will be smaller, but their exquisite flavor and nutrients will remain intact."

"Working on a small scale is very satisfying. We don't have to deal with competition. The fluctuation of prices is minimal and the direct contact with the client is rewarding," says Joan Ribosa.
