Mr Chen has installed seven air conditioner units to ensure that if the weather becomes warmer or more humid, he will not lose his persimmon crop. The drying process takes 40 to 50 days, and can be sped up by air conditioning. Persimmon fruit is common and popular in China, and is finding its way to other destinations worldwide.
