Italy: Great success for organic mushrooms
"Funghi Valentina" is a company established in 1980 by Oriano Borghi. It developed a technique to maintain nutritional characteristics unaltered and produces 3,000 tons of field mushrooms a year. It employs around 110 people, 90% of which are women.

"We only grow field mushrooms and have reached a volume of 90 million mushrooms for 3000 tons in total. We have 30 growing rooms covering 13,000 square meters in total. We mainly sell them on the domestic market and our produce reaches the shops in just a few hours," explains Valentina Borghi.

Mushrooms are always in season, it's just a case of changing recipes. Funghi Valentina promotes recipes and ideas to stimulate consumers.
"We are also specializing in processed products and preserves. We have recently developed cold-dried mushrooms and demand is constantly increasing. The maximum temperature allowed is 38°C, so the drying process is longer but nutritional and organoleptic qualities remain unaltered."

The latest products are: sliced dried mushrooms suitable for first courses; powered mushrooms perfect for first and second courses, sauces and dough, dried mushrooms to be eaten raw or cooked.

The company also holds the Carbon Footprint certification and production is managed to guarantee environmental sustainability and reduce waste. What is more, air filters enable us to use clean unspoiled air. Irrigation water comes from deep aquifers that are monitored. Waste is sorted and recycled or disposed of. The sewage treatment plant is an activated sludge one and energy is supplied via the photovoltaic plant and with natural gas.
