"Spray system in vacuum cooling machinery could improve product quality of mushrooms"

"Mushrooms are seen as a rarity among food products because they have high nutritional value, fresh flavor, low heat, and are healthy. However, fresh mushrooms contain a lot of moisture and they are easily damaged during transport, packaging, and storage. This causes the mushrooms to lose product quality and even decompose. It is therefore important to select a suitable pre-cooling method for mushrooms." This is according to Andy Lau of Dongguan Wanjia Machinery Co., Ltd.

"Vacuum cooling machinery quickly pre-cools, which helps to preserve the original color and flavor of mushrooms. It also lowers the cost price of transport and extends the shelf-life of mushrooms. The only drawback of vacuum cooling is the gradual loss of moisture."

"Much of the mushrooms' moisture evaporates during the vacuum cooling process. When more than 5% of the moisture evaporates, then there is certainly an influence on the product quality of the mushrooms. This in turn leads to commercial losses. We therefore installed a spray system in our vacuum cooling machinery to prevent too much loss of moisture and to increase product quality."

"It is also important to have a control system that controls the water volume in the spray system. We currently use repeated spray methods to adjust the spray time for various kinds of products with different requirements. This allows us to better address the problem of evaporation during the vacuum cooling process of mushrooms."
