Italy: Listeria affects produce

The case of frozen products contaminated with Listeria that concerned a few batches of minestrone, is once again the centre of attention. Also because all fresh produce companies should monitor the pathogen.



Sicural microbiologist Claudia Fiumana stresses that "Listeria checks are essential and must not be underestimated. Let's take a few examples: the characteristics of 'ready to eat' products facilitate the multiplication of the bacteria. Biofilms are the ideal environment for the growth of microorganisms and for their adhesion to solid surfaces. Only constant monitoring helps keep things under control."

Fresh products must therefore be monitored too. As Sicural lab manager Silvia Zuccherelli explains: "checks must be carried out wherever raw materials are handled. We generally agree with companies on the areas most at risk. Surface samplings can be carried out easily by the staff and must be performed regularly so as to avoid future contamination."

Cleaning is always the most effective way of containing Listeria. Washing water must also be checked frequently, just as the the products that are processed or packaged. 

Low temperatures are not enough: the classic +4°C of fridges does not prevent Listeria from multiplying, while cooking food makes it harmless.
