In Bremerhaven, potato peels are turned into chips

The head chef of a Bremerhaven hotel wants to reduce the waste in his kitchen to a minimum and is always finding new ways to turn kitchen leftovers into something edible.

Potato and carrot peels are processed into chips and served with salads, broccoli stems become vegetable schnitzels. In the last four years, the 45-year-old chef has reduced waste with more than 2000 litres.
