Italy: Alicos produces VeganOK organic products for demanding consumers

"Controlled chain from sowing to harvesting, organic and VeganOK certified open-field crops, respect for natural ripening times, hand harvesting, low-temperature processing and pasteurisation not to stress the raw material - this is the perfect mix to obtain a delicious product range," explains Alicos owner Gaetano Palermo.

"Our flagship products are the vegan pistachio and almond spreads, which are lactose, gluten and palm oil-free."

Gaetano Palermo, owner of Alicos. In 2016, the company won Agrifood's "Il Golosario" prize for its pistachio spread range.

Alicos is an award-winning company, among the leaders in its sector, that uses traditional recipes handed down for generations and high-quality genuine ingredients to make unique products.

"We know full well that food is not mere nourishment, we go beyond that. We take our work as something important to take care of the health and well-being of each consumer. This is why they choose us among hundred of others."

Vegetables are harvested when they're fully ripe so they have the best organoleptic colour, flavour and sweetness characteristics. They are processed just a few hours after harvesting.

Owner and founder Gaetano Palermo established Alicos in 2005 in Salemi (Trapani). The company covers 50 hectares of mostly local fruit and vegetables and produces typical local products that meet the needs of consumers in the third millennium.

The care for agricultural products is transformed into delicious flavourful delicacies with both sweet and savoury pairings that can be original and unusual.

"Another product is Nonna Peppa's artichoke wedges in extra-virgin olive oil, garlic and mint. It was my grandmother's recipe and she is now 103, proving that eating healthily helps living a long life.

Filled "beccafico" dried tomatoes are also delicious, just like the tuna and onion paté, the hot tomato capuliato and the Nocellare del Belice olives.

All marmalades and jams are organic. They include rare flavours such as tangerine, Ribera strawberry or black mulberry. "These are all traditional natural flavours that are worth trying. You'll never be able to do without them again."

Preserves are also made according to local tradition and include apple caponata (a humble variant of the traditional aubergine caponata dating back to the 18th century), wild fennel spread as well as date or cherry semi-dried tomatoes, excellent served as an appetiser or as a side.

A passata made with cherry (55%) and date (45%) tomatoes, oil, basil and salt is also very popular. It is only produced in summer, as tomatoes must have a high sugar content and bright red colour.

The entire tomato range is subject to great attention to detail - from selecting high-quality produce to following a strict organic production protocol - to guarantee the best final result.

"Our production capacity can meet the needs of a large share of the market. We export 55% of our products."

"Our main channels are wholesalers, H&R, retail chains and delicatessens. We export to England, Sweden, Germany, Belgium, Australia and the US."

"In the future, we would like to expand our production and processing activities although we also think conveying the values that characterise our work is also important. In addition, we are increasingly convinced that the way a lot of the food is being produced exploits the soil and the environment, which we will pay for in the future. We have always being committed to doing just the opposite."
