Mexico: Jalisco aims to beat Guinness record for world's largest guacamole

Héctor Padilla Gutierrez, Jalisco's Rural Development Secretary, reported that the entity will create the world's largest guacamole, which is expected to weigh 3.5 tonnes.

Padilla Gutiérrez said, at a press conference held at the Jalisco Representative Office in Mexico City, that the goal is for the mega guacamole to be recorded in the Guinness Book of Records.

The elaboration of the world's largest guacamole will be on September 3 in Concepción de Buenos Aires, Jalisco.

The official said that this action is intended to promote the progress achieved by the avocado production chain, which has allowed significant investments and jobs in the field as well as in the packing houses, and the network of services linked to its production and marketing.

The avocado, Padilla Gutiérrez said, has been an important factor in Jalisco's fields. He mentioned that in 2012 40 thousand tons were harvested, and in 2016 the figure rose to 120 thousand tons, that is a 300 percent production increase.

Regarding exports, the Secretary said that it was 12 thousand tons in 2012, while in 2014 it was 28 thousand tons, and in 2016 there were 69 thousand tons.

He said that 600 gastronomy students, along with close to 400 inhabitants of Concepción of Buenos Aires, will participate in creating the mega-guacamole.

The ingredients will be contributed by the producers and they are four thousand 200 kilos of avocado produced in Concepción of Buenos Aires; 500 kilos of tomato from the municipalities of San Gabriel and Tamazula de Gordiano; 200 kilos of lemon from San Martin Hidalgo and 150 kilos of onion produced in the municipality of Tizapán El Alto.

Padilla Gutiérrez indicated that the event will be attended by chef Antonio Curto; Aram Cortés, the Jalisco artist responsible for decorating the bowl of guacamole, and Carlos Tapia Rojas, the Guinness Prize adjudicator.

The official emphasized that Jalisco is the second national producer of avocado, after Michoacán, with 12,675 certified hectares in thirteen municipalities.

Of the 69 thousand tons of avocado exported in 2016, 35 percent went to Canada; 30 percent to countries in Europe; 25 percent to Japan and 10 percent to Central and South America, Hong Kong and the Middle East.

The current Guinness record of Guacamole was established in 2013 by the Michoacan municipality of Tancítaro with 2.6 tons.
