French asparagus for star restaurants

For Cofruid’Oc, asparagus is a small but important product. The company supplies white, violet and green asparagus. “We supply to star restaurants, so quality has to be extremely good,” says Philippe Jean. “The asparagus is picked in the morning, packed in the afternoon and sent by evening, or sometimes the next day. We have employees who have worked for Cofruid’Oc for more than ten years who sort the product.”


 
Celestine
The white and violet asparagus are sold under the Celestine brand and the green asparagus under Sauvageonne brand. “Green asparagus is mostly sold in the South of France, while white and violet are mostly sold in the North or to the export market. They are two different products, with two different groups of customers, and two different stories,” Philippe continues.
 
Easter
The asparagus season traditionally starts late March, early April. “This year’s late Easter made the season more difficult. Prices dropped earlier than expected. We had a good, cold winter, and temperatures in February and March were also good. Easter was the only cause for the difficult season. We started early, but the Netherlands and Germany were also earlier with bigger volumes.”
