Physalis, from the Andes to our table

Physalis peruviana or physalis is one of the healthiest and most nutritious fruits there are. It is a widely consumed food in the countries of South America; however, in Spain it is still rather unknown and not widely produced. Its expansion to other continents is slow, according to Fernando Garnique, manager of GB Organic in Peru. "Physalis is better accepted and more popular in some select markets, so it is difficult to grow in this sector." Nevertheless, the product is currently available fresh, dehydrated or in jelly. In this way, its export, as well as its consumption, is facilitated worldwide. Some of the countries where the fruit has better chances include the Netherlands, Germany and Spain.

Physalis is originally from Peru, its main producer, and although there are other countries that are also involved in its production, such as Colombia, "we do not compete directly, since Colombia only markets it for fresh consumption. We, in Peru, have a greater volume and other formats, and since we are able to offer it dehydrated, our production extends to every month of the year," affirms Garnique.

At present, GB Organic is devoted to the production of physalis all year round, with the period from November to January being the busiest one. According to Garnique, the climatic conditions of the Andes, where this fruit is mainly grown at 2,500 metres above sea level, are ideal, as well as stable for a year round production. The area's conditions are so good that, according to Garnique, "even though this year's campaign started a little later due to the lack of rain, we have now already recovered the normal production rate."
