Oca du Perou and Capucine Tubereuse

Specialty tubers increasingly popular

Special tubers are becoming increasingly popular. The Oca du Perou and Capucine Tubereuse are originally from the Andes in Ecuador and Peru, where they are used to replace potatoes. You are putting something special on the table with these unique varieties, Smeding reports in its newsletter.

Oca du Perou
The Oca du Perou are red, orange, yellow or white coloured tubers. The different shaped spuds have a special flavour. They are crunchy and can be both sweet and bitter. They are therefore very suitable for use in salads, but are also tasty cooked, fried or encrusted! In South America the Oca du Perou is often used in stews and soups.

Capucine Tubereuse
Capucine Tubereuse are oblong white tubers with stripes and inset purple eyes. Their flavour is fresh and spicy.
You can cut the Capucine Tubereuse into slices or grate it, and it is ideal to bake or stew, but also delicious in a soup or raw in a salad.
