New pepper taste model coming into operation

Wageningen UR Greenhouse Horticulture has teamed up with two Dutch breeders, Rijk Zwaan and Enza, to develop a model for a quicker prediction of the taste level of bell peppers. The research has been partly funded through the TTI Groene Genetica Programme and has been possible thanks to the contribution from the "Vrienden van het Smaakmodel Paprika" ("Friends of the Pepper Taste Model"), a group of three leading pepper growers.

On the basis of a number of input parameters, the model predicts the results of the consumer panel. This new pepper taste model makes it possible to speed up and improve the measurement of the flavour of sweet peppers, creating new opportunities for Dutch breeders, growers and traders regarding work to further improve the taste of their products.

Wageningen UR Glastuinbouw has previously developed taste models for tomatoes and melons. Taste models allow for a faster and more consistent measurement of flavour levels. These measurements are used in breeding programmes and in the development of cultivation recipes. Additionally, they facilitate communication in the supply chain, making specific action within the chain targeted at improving flavour possible, thus creating added value and better serving consumers.
