From guacamole to broccomole

There are so many possibilities with vegetables! Everyone knows that cauliflower can be used as rice and pizza crust. Carrots and zucchini work so well as a substitute for pasta that it's not even used as a substitute anymore. But using broccoli as a base for guacamole is something we have never heard of.
