US: research into ideal aromas of avocados

Research carried out by the American ministry of Agriculture and the University of California - Riverside aims to research what important components of avocados contribute to the ideal aroma. Hass avocados have at least 25 aromatic substances that contribute to the fruit's aroma. The research will look into the nature and concentrations of these substances. Current results show that testing subjects find the avocados tastier when some substances decreased in ripening fruits.
