North Carolina vegetable packed with taste and nutrition
The sweet potato may be the most unjustly typecast of vegetables. Mention sweet potato, and "casserole" will be the first thing that comes to mind for most people. Granted, pureed sweet potatoes drenched in butter and brown sugar are one of God’s little treasures and a true Southern staple. But they are so much more.
My favorite rendition is built around the single most overlooked fact about sweet potatoes: They don’t need sugar. In this recipe, chunks of sweet potato are tossed with Vidalia onions and olive oil and roasted in the oven.
